I want a web page to epub converter that strips ads with uBlock, extracts the article, and lets me edit title, cover, and table of contents
The author wants to send a page through uBlock Origin or similar, then the Postlight parser, then customize before packaging. Customization includes cover image or none, title and metadata, optional table of contents, and renaming chapters. Today they use a personal project converter and spend a lot of time cleaning output in Sigil.

WebToEpub github.com
Free GPLv3 Chrome/Firefox extension that packs web pages into EPUB and lets you pick a cover image, but the README doesn't confirm editing of title, chapters or table of contents, it is aimed at web novels rather than single-article cleanup, and it needs an extension install.
web2epub github.com
Python command-line tool that extracts readable content, builds a TOC from page titles, and accepts a title, author and cover, but it has no visual editor for chapters or TOC and no uBlock step. The license isn't stated on the page I checked.
Page to EPUB Studio
Paste a URL (or the HTML saved from your uBlock browser). Ad, cookie and newsletter blocks are stripped, Readability pulls out the article, and you can then edit the metadata, choose a cover or none, rename, split, merge and reorder chapters, toggle the TOC page, and download a valid EPUB. Some sites block the public CORS proxies or render content with JavaScript; for those, use the Paste HTML tab.
